December 12 Meal:Frozen Fish

Fish with Orange-Saffron Broth
This is an interesting mixture of fish dish and soup.  I made halibut back in October and loved it.  When I asked at Whole Foods for some fresh halibut I was dissapointed to hear it was out of season.  The fish guys said they get frustrated that magazines ublish recipes with main ingredients that are out of season.  I'm with ya, guys!  They pointed me towards som frozen halibut.  The recipe also calls for cod, but we really didn't like cod the last itme we made it, so I just stuck with one kind of fish.  The soup is made from clam juice (which I watered down a bit by using water in the place of one jar), white wine, spices (star anise, bay leaf saffron), orange juice, chayote, carrot, celery, and leek.  Everything tasted good, but the frozen fish had tons of little bones in it.  The texture also wasn't as good as the fresh version.

Gnocchi with Radicchio, Pancetta, Pine Nuts, and Rosemary
Last time I made gnocchi from Bon Appetit was the day we went to the State Fair, which was a timing disaster.  I thoguht this time I could pull it off.  However, I realized with this go-round that gnocchi are just really hard to make.  This version was made with russet potatoes, egg yolk, flour, and salt.  The texture came out pretty mushy, even though I followed the timing directions correctly.  I only got one batch that was firm enough to eat.  It was combined with pancetta, shallots, radicchio, pine nuts, rosemary, and Parmesan.
