Decemer 10 Meal: Let Go My Romesco

This was a Friday-night dinner to remember, and repeat in the future.  It was pretty easy and great the second day, too!

Romesco is a sauce that originated in Spain and usually contains nuts, garlic, olive oil, and red peppers.  This version has bed crumbs, jarred red peppers, almonds, olive oil, Sherry vinegar, garlic, and paprika.  The chicken is coated in breadcrumbs, salt, and pepper and cooked in olive oil.  To top it all off, cook up some prosciutto cracklins.  Everything sits on top of a bed of butter lettuce that is mixed with oil and vinegar.  The salad ads a nice cool tang to the chicken.

Yuminess: 10 out of 10

Nothing like a good old gratin to start your weekend right.  This one has sauteed shallot, cauliflower, chicken broth, cream, Dijon mustard, sage, flour, and lemon peal.  That's all topped with a crust of breadcrumbs, Dijon mustard, and sage and baked.  Yes, you may be making a healthy thing fattening, but it will taste so good.
